
Pancake breakfast
Good morning. Well this morning when we got up we both wanted pancakes so I thought it would be a good time to test out one of Roni’s pancake recipes. I added about 1tsp or less of mini chocolate chips to each pancake too. The husband said they were just okay…he knew it was not a regular pancake mix…I thought they were pretty good. I could tell the difference from a regular pancake but these are much healthier for me. Anyways I have made extra pancakes to take for breakfast this week.
Right now I don’t have much to chat about but I will update as the day goes by. Now I am on to laundry and clean the kitchen. :-(

Mmmm lunch
Lunch today ended up being a sandwich made w/ 1/2 a pc flat out bread, 2 oz ham, 2 oz cheese, 1/4 cup avocado, tomato, onion, red pepper and some mushroom. It was fantastic! I also had 1 cup of my Italian Vegetable Soup. And a big glass of water on the side. I am working on load the pic…computer is not working with me though.
I am not sure what dinner will be. I have some salmon and scallops but I don’t know if I want fish two nights in a row. We will have to see. Maybe the husband will provide some input.

Dinner
So dinner is going to be some salmon and scallop skewers that we picked up at the store along with small baked potatoes and I am going to have some broccoli probably…unless the husband wants a veggie too and then I will split some peas with him. I will post a pic if I remember, other wise you will not hear from me until tomorrow at work. Most people are taking off the morning so they can sleep in after staying up late to watch the super bowl. I am not watching the game so I am going to work at normal time
This way I can read up on my reading for school and blog. Oh …and I downloaded Sn 6 of The Biggest Loser. I have never seen the show but I HOPE this motivates me. It might…at least it will entertain me

The pancakes look tasty! And the wrap looks great. I should try to incorporate some avocado into my eats!
